Place all the drained artichoke hearts in a blenderContainer or food processor. Cover and process until finely chopped. Stop machine and scrape the sides of the bowl if necessary. Transfer artichokes to a medium saucepan, stir in the cheese and chili peppers. Cook, stirring, on medium-low heat for about 15 minutes or until heated through and cheese is melted. 1 package frozen (10-oz) chopped spinach, thawed and well drained
1 cup mayonnaise-style saladDressing
1 cup sour cream
1 / 2 cup grated Parmesan cheese
1 can (8-oz) water chestnuts, drained and chopped
1 / 8 teaspoon ground red pepper

In a medium bowl, mix together the salad dressing and sour cream. Stir in the Parmesan cheese and red pepper to taste. Add the spinach and water chestnuts, stir well to mix. Cover and allow to cool. Serve with various crackers and / or fresh vegetables.

Yield: 4 cups
